Charcoal Grilled Pineapple Salsa

I got quite a few questions about the Charcoal Grilled Pineapple Salsa, so here we go.  It's one of my all time favorite side dishes for BBQ and grilled foods. It's fresh, sweet and spicy and goes really well with almost any grilled or smoked foods. It has been a huge success in our BBQ parties and it looks very pretty with its bright yellow, red and green colors.

All you need is a charcoal grill and the following ingredients:

  • 1  large good quality pineapple
  • 1/2  red pepper (paprika)
  • 2  spring onions (scallions)
  • 1-2  jalapeños (or other fresh chili peppers if you like more heat)
  • 3 tbsp  chopped fresh coriander (cilantro)
  • 1 tbsp  soy sauce
  • 1 tbsp  freshly squeezed lime juice
  • 1 tbsp  brown sugar
  • 2 tsp  fresh finely grated ginger

Prepare your charcoal grill for direct grilling.  Slice the pineapple into chunky wedges.  Oil the grill grate and grill the pineapple, red pepper, spring onions and jalapeños directly over charcoal until nice grilled color and the pineapple softens up a bit. If you like, you could use wood chips on the charcoal for a nice smoky flavor.

Chop up all the grilled vegetables and pineapple wedges and put them in to a glass bowl.  Add all the other ingredients and mix well. Refrigerate for an hour or two. Serve it in a glass bowl in room temperature.
